Here is a salad you might enjoy eating on the first Dietbet Challenge day.
- Carrot peeled and grated
- Cucumber grated
- Cooked Green beans cut in strips
- Bell Pepper
- shallots diced
- Chopped basil, mint and cilantro
- Cashews (nuts on your plan)
Throw the ingredients together and drizzle with balsamic vinegar. If you like a creamier dressing, add a bit of avocado (If it is on your plan.)
