Cardamom Meatloaf – Metabolic balance Monday Recipe

Ingredients (seasoning is for 6 servings.)
  • carrots , finely diced
  • onion , finely chopped
  • zucchini , finely diced
  • garlic , crushed into a paste
  • 2 teaspoons ground cardamom
  • 1 teaspoon cumin
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground red pepper (cayenne)
  • 1/4 teaspoon freshly ground black pepper
  • ground beef
  •  teaspoons salt
  • olive oil


In a pan cook carrots, onion and zucchini over medium heat.

Add garlic, cumin, cardamom, cinnamon, red pepper and black pepper.

Cook until seasoning is mixed into the vegetables and then set the vegetables aside to cool.

In a large bowl mix beef salt and cooked vegetables.

Shape the meat mixture into a loaf and bake until the meat is cooked. (Time depends on the size of your meatloaf.)  Once cooked, let the loaf sit for 10 minutes before serving.


To make sure the meatloaf is cooked, use a temperature gauge.  We have not given a specific time because it will depend on how much meat you are cooking.

Also, the seasoning is for 6 servings, if you are only making a single serving meatloaf, please reduce the amount of seasoning. If you decide to create a six serving meatloaf so that you don’t have to play with the seasoning, take your extra meatloaf and freeze it for sandwiches.
