Yummy apple pancakes for breakfast – a recipe for Phase 2 with oil! We saw it on a German Metabolic Balance Website (sorry, couldn’t find the blogger anymore.)
Ingredients:
Apple, some grated fresh ginger
Batter: 2 eggs, some water, 20 grams wholegrain rye flour, 1 tsp coconut oil, further spicing ideas: cinnamon and / or turmeric to taste
Add coconut oil to a slightly heated pan, use table spoon to make small pancake-batter heaps in pan. Fry from one side, turn after you see the outside harden.
The pancakes really do not need long to brown.
