Winter Vegetables with Pineapple

This warm and comforting dish is a bit of a cheat meal but packed full of flavor and nutritious ingredients!

1 serving of goat cheese (or other cheese from your plan) 
1 serving of vegetables (such as cabbage, leeks, carrots) 
1/2-3/4 cup (150 mL) vegetable stock
1 pinch of turmeric
1 pinch of black sesame seeds
1 serving of fresh pineapple
Fresh herbs
Salt and pepper

Set a small portion of goat cheese aside to eat separately. Wash and clean the vegetables and cut them into fine strips. Steam with vegetable stock and season to taste. Cut the pineapple into small pieces, add to vegetables and bring to the boil. Mash the goat cheese with a fork, add to the vegetables, mix and add freshly chopped herbs. Enjoy!
