Apple Scrambled Eggs

An apple a day keeps the doctor away. So it is perfect to eat them for breakfast as apple scrambled eggs. Although more uncommon than regular scrambled eggs, it is a great way to utilize eggs and apples in delicious way!

Ingredients:
– 1 portion of eggs
– 1 apple
– Splash of water
– Salt
– Vanilla
– Cinnamon
-Ginger

Preparation:
Wash and core the apple and chop or grate it. Heat a pan and cook the apple for a few minutes until soft. Whisk the egg with a splash of water and season with vanilla, cinnamon, ginger, and salt. Pour the egg over the stewed apple and scramble to your liking. Sprinkle with cinnamon before serving. Enjoy!

Apple and Oat Crumble

Oats are an extremely versatile ingredient and are perfect in sweet dishes such as this delicious crumble. Give it a try and let us know what you think!  

Ingredients (1 serving):
160 g (1 cup) of sour apples (e.g. Granny Smith)
30 g rolled oats
15 g butter
20 g chopped walnuts
Cinnamon
Vanilla
Lemon juice
Pinch of salt 

Preparation:
Cut the apple into small cubes or slices, mix with lemon juice and place into a small greased casserole dish. Combine the nuts and oats and then add together with the butter, salt, vanilla, and cinnamon. Gently work the mixture with your hands to form crumbles. Spread the mixture over the apple slices and bake at 300 °F (150 °C) for 20 to 30 minutes. Enjoy!

The crumble can be adapted to your own plan depending on the phase and food list. If you don’t have lemon on your plan, you can substitute lemon zest. Instead of oats you can also use rye flakes and some chia seeds.

Apple Cinnamon Oatmeal

This classic combination of apples and cinnamon with oatmeal is perfect for breakfast or snack.

Ingredients:
1/2 cup of oats
1 cup of water or milk of choice
1/4 tsp of cinnamon
Pinch of ginger
Pinch of nutmeg
1/4 tsp salt
1 apple, chopped into small piece
Pecans

Preparation:
In a pot over medium heat, add the oats, milk or water, cinnamon, ginger, nutmeg, and salt. Add in the apples and cook for 10-15 minutes or until the apples and oats are cooked. Remove from the heat and garnish with pecans. Enjoy!


Pumpkin Apple Casserole

This sweet and savory casserole is perfect for a cool fall day!

Ingredients:

1 egg
1 serving of pumpkin
1 apple
Spices: cinnamon, caraway seeds, chili, curry powder, some fiery paprika powder, fresh parsley
1/3 cup (75 ml) vegetable stock
Salt and pepper

Preparation:
Wash pumpkin, remove seeds and cut into 3/4″ thick slices and halve them again. Wash the apple, remove the seeds and cut into thin slices. If you’re allowed to use oil, grease a small fireproof casserole dish with some oil, otherwise layer pumpkin and apple slices without the oil. Season everything well with the spices. Add the vegetable stock and cook in the oven at 350°F for about 20 minutes. After 20 minutes whisk the egg, season to taste and add chopped parsley. Add a little water to the egg and pour it over the pumpkin and apple slices. Bake again for 20 minutes. Enjoy!

Apple Pie Smoothie

With the air getting cooler, the wonderful flavors of fall are coming back into season, so give this delicious spiced smoothie a try!


Ingredients:
1 apple
1/2 frozen banana
1/2 cup of yogurt
1/2 cup of milk
1/2 tsp cinnamon
Vanilla
Pinch of nutmeg
Pinch of cardamom 

Preparation:
Add all the ingredients to a blender and process until smoothie. Enjoy!

Tips: For extra nutrition you can also consider adding almond butter or chia seeds!

Salad with Sole and Apple

This easy and quick salad helps you get your apple day in a delicious meal!

Ingredients:

1 serving of sole filets
1 serving of salad according to your plan
1 apple
Vegetable Broth
Vinegar
Salt and pepper

Preparation:
Cut the fresh sole filet into medium-sized pieces, season with salt and pepper and cook on each side just before serving. Clean, wash, spin and cut the salad into bite-sized pieces. Wash the apple, pat dry, halve and remove the core. Cut the apple into narrow slices. Mix the vegetable stock with salt, pepper and vinegar. Mix the dressing with the salad in a bowl. Arrange on a plate and serve. Enjoy!

Apple Tiramisu

Today we have a twist on an Italian classic. Give it a try and let us know what you think!

Ingredients:
1 serving of cottage cheese
2 slices of rye crispbread
1 apple
1 cup of espresso
Cinnamon
Cocoa powder
Mineral water
Vanilla

Preparation: 
Place the crispbread on a plate and add soak lightly with the espresso. Wash and grate the apple, spread half on top of the crispbread and sprinkle with cinnamon. Mix the cottage cheese with the vanilla and water and spread half of it on top of the crispbread. Place the second slice of crispbread on top and soak lightly with the espresso again. Top with the other half of the grated apple and finally spread the rest of the cottage cheese on top. Chill in the fridge for at least an hour, the longer the better. Sprinkle with cocoa powder before serving and then enjoy.

Tip: If there is no cottage cheese on your plan, you can swap this with yogurt. The apple can be replaced with another grated fruit or even fruit puree.

Our Mandelade breakfast recipes are perfect on today`s “Almond Day” and we’d love to share two versions with you – an energy packed power breakfast and an enhanced beauty option.

For the energy packed “power” breakfast you need:
30g almonds (for female | 40g almonds as a male)
20g raw sunflower seeds (for female | 30g raw sunflower seeds for male)
½ Apple
1 pinch of cinnamon

The beauty enhancing breakfast where sensual almonds meet sunflower seeds, mango and vanilla for a wonderful start to the day. 

You need:
30g almonds (for female | 40g almonds as a male)
20g raw sunflower seeds (for female | 30g raw sunflower seeds for male)
¼ Mango
