National Almond Day

Our Mandelade breakfast recipes are perfect on today`s “Almond Day” and we’d love to share two versions with you – an energy packed power breakfast and an enhanced beauty option.

For the energy packed “power” breakfast you need:
30g almonds (for female | 40g almonds as a male)
20g raw sunflower seeds (for female | 30g raw sunflower seeds for male)
½ Apple
1 pinch of cinnamon

The beauty enhancing breakfast where sensual almonds meet sunflower seeds, mango and vanilla for a wonderful start to the day. 

You need:
30g almonds (for female | 40g almonds as a male)
20g raw sunflower seeds (for female | 30g raw sunflower seeds for male)
¼ Mango

For both options, simply soak the almonds and sunflower seeds overnight in water and puree all ingredients in the morning. Enjoy!Mandelade

We Are What We Eat!

This means a healthy and balanced diet of healthy food helps the whole body – inside and out. The right foods allow us to feel great and look great with clear skin and healthy hair. 

If we take apples as an example, they contain so many valuable nutrients and trace elements that can bind and neutralize damaging substances in the body such as free radicals. This results in so many benefits such as strong and healthy connective tissue aka beautiful skin!

Try this easy recipe – for a different way to get your apple a day: apple and oat streusel with walnuts (this is a Phase 3 recipe)

Ingredients for 1 serving:
160 g of tart apple (for example Granny Smith)
30 g of rolled oats
15 g of butter (or ghee)
20 g of chopped walnuts
Spices: cinnamon, vanilla bean, lemon juice (optional), a pinch of salt

Preparation:
Peel the apple, cut into thin wedges, (drizzle with lemon juice) and place in a small greased ovenproof dish. Chop the nuts, add the oats and knead them together with the butter / ghee, salt, vanilla and cinnamon to form the streusel (crumble). Spread the streusel over the apple slices and bake at 150°C (300°F) for 20 to 30 minutes.

Drink your allotment of milk as the protein portion.

Breakfast with a Twist

Scrambled Eggs with Apple

Ingredients: 1-2 eggs (depending on your serving), 1 shot sparkling mineral water, salt, fresh vanilla pulp, a pinch of cinnamon, 1 apple

Preparation: Wash and core the apple and chop or grate into small pieces. Heat a good non-stick pan, without adding any fat, sauté the apple. Beat the egg with the mineral water and season with salt. Add the egg mixture to the cooked apple and heat until firm. Sprinkle with cinnamon and serve.

Apple-Vanilla-Sesame-Dessert

It’s Christmas time and you want to have a something sweet at the end of your meal. What should you have??? How about trying this delicious, simple apple, vanilla and sesame dessert.  

You’ll need:
1 apple
½ tsp coconut oil,
vanilla pulp scrapped from the pod
sesame seeds

Preparation:
Cut the apple into slices.
Heat coconut oil in a pan, add apple slices and add in the vanilla. Sauté the apple slices until soft and have a lovely golden brown color. Sprinkle sesame seeds on top and serve. 

Such a yummy dessert – and 99% “on plan”!

Pumpkin Season – Yummy Casserole

Yes – it’s still pumpkin season, so here’s a hearty and warming pumpkin-apple casserole to enjoy. This is even a Thanksgiving-worthy Recipe!

You will need:
1 egg
1 serving of pumpkin
1 apple
Spices: cinnamon, caraway seeds, salt & pepper, chili, curry powder, some fiery paprika powder, fresh parsley
75 ml vegetable stock

Preparation:
Wash pumpkin, remove seeds and cut into 2 cm (3/4″) thick slices and halve them again. Wash apple, remove the seeds and cut into thin slices. If you’re allowed to use oil, grease a small fireproof casserole dish with some oil, otherwise layer pumpkin and apple slices without the oil. Season everything well with the spices. Add the vegetable stock and cook in the oven at 175°C (350°F) for about 20 minutes. After 20 minutes whip the egg, season to taste and add chopped parsley. Add a little water to the egg and pour it over the pumpkin and apple slices. Bake again for 20 minutes. Enjoy!

MB 11-19 - Kuerbis

Roast Beef & Broccoli

This roast beef and broccoli dish, pan fried with apple is tasty and wonderfully easy to prepare. 

Ingredients:
1 serving of roast beef
1 serving of broccoli
1 portion wholemeal rye bread
1 apple
salt, pepper

MB 11-05 - broccoli

Clean, wash and cut the broccoli into florets. Bring about 2 cups of salted water to the boil in a saucepan. Add the florets and simmer covered until cooked al dente (about 5-8 mins). Drain in a sieve.

Remove the seeds from the apple, cut into eighths and finely chop. Cut the roast beef into 1 cm (1/2″) wide strips and add to the pan, together with the broccoli and apple. Season with salt and pepper and fry for two minutes.

Arrange everything together on the bread and enjoy.

Fruity Avocado-Apple-Salad

Even as it gets colder and colder outside, this doesn’t mean we have only eat hot food all the time! Do you feel like having a fruity avocado apple salad today.

You need:
½ apple
½ avocado
Spices: salt, pepper from the mill, 1 TBsp. apple cider vinegar, ½ TBsp. olive oil, ¼ tsp. sesame seeds

Preparation:
Brown sesame seeds in a dry pan.
Wash, core  and chop the apple.
Halve the avocado, remove the stone and separate the pulp from the skin with a tablespoon. Dice the pulp.
Mix together apple cider vinegar, sea salt, pepper and olive oil to a dressing.
Combine the apple and avocado cubes with the dressing and sprinkle half of the sesame on top.

Enjoy with your protein!

A Fall Highlight: Cabbage-Apple-Recipe

Today we enjoy a wonderful fruity savoy cabbage dish perfect for cooler fall evenings.

MB 10-02

You need:
1 serving chicken breast
1 serving savoy cabbage
1 apple
Spices: sea salt, black pepper, turmeric, ground caraway, 1 pinch of cinnamon, some (fresh) ginger
75 ml vegetable broth
1 TBsp. (rapeseed) oil
Apple cider vinegar
Herbs: parsley

Preparation: Wash the chicken breast, pat dry and cut into thin strips. Clean the savoy cabbage, cut into thin strips, wash and drain. Wash apple, remove the core, quarter and cut into thin slices. Wash parsley, shake dry and chop finely. Brown chicken breast in oil, and season to taste. Remove from the pan and set aside. Place the savoy cabbage in the pot, sauté and season well, deglaze with vegetable broth and simmer gently. When there’s only a little liquid left in pot, season the cabbage, add the apple slices, cooked chicken breast and chopped parsley, bring again to the boil and serve. Enjoy!

Mandelade – Almond Sunflower Seed Mix

Try these wonderful almond muffins:

Ingredients:
You need (1 serving):

30 g almonds
10 g sunflower seeds
1 apple
cinnamon

Preparation:
Soak almonds and sunflower seeds overnight in water. Drain the almonds and sunflower seeds and puree with a little water. Add a grated apple and fill the mixture into a muffin form. Bake in preheated oven at approx. 200*C / 395*F for 15 minutes, allow to cool.  Garnish with a pinch of cinnamon. Enjoy!

Always Delicious: Omelette with Leek and Apple

Ingredients:
1 serving leek
1 serving egg
1 apple
spices: salt, pepper to taste

Wash and clean the leek and cut into fine rings. Saute leek in a hot pan for a few minutes, season with salt and pepper. Whisk the eggs and season with salt and pepper. Pour the egg mixture into a hot pan and let it set, then fry on both sides. Cut the apple into small pieces. Place the omelette on a plate and top with leek and apple.
Enjoy your meal!
