Creamy Broccoli Soup

This smooth and creamy broccoli soup is great for the upcoming fall and winter months.

Ingredients:
1 serving of broccoli
1 cup (250 ml) vegetable broth
1 serving of cream cheese
Cayenne pepper
Nutmeg
Salt and pepper

Ingredients:
Clean the broccoli and cut into small florets. Bring the vegetable stock to the boil and cook the florets in it for about 5 minutes until soft. Take out two broccoli florets and set aside. Add half of the cream cheese to the broth and remaining broccoli and puree in a blender until smooth. Season with cayenne pepper and nutmeg. Arrange the soup on a plate, add the remaining cream cheese and garnish with the reserved broccoli florets. Enjoy!

Roast Beef and Broccoli

Yesterday we highlighted the amazing benefits of broccoli. Today we have an easy and delicious recipe that uses this great vegetable!

Ingredients:
1 serving of roast beef
1 serving of broccoli
1 portion rye bread
1 apple
Salt and pepper

Preparation:
Clean, wash and cut the broccoli into florets. Bring about 2 cups of salted water to the boil in a saucepan. Add the florets and cook until al dente (about 5-8 mins). Drain in a sieve.

Remove the seeds from the apple, cut into eighths and finely chop. Cut the roast beef into 1/4 in (~1cm) wide strips and add to a pan, together with the broccoli and apple. Season with salt and pepper and cook for two minutes.
Arrange everything together on the bread and enjoy!

Tips: For even more flavor try experimenting with different herbs such garlic, rosemary, or chili!

We know that everything that is in this valuable vegetable has been fully researched by scientists. One of the most important nutrients that broccoli contains is the essential trace element chromium. Chromium has a positive effect on insulin production, your blood sugar balance, and overall metabolism. Broccoli also contains the indirect antioxidant sulforaphane, which, when eaten regularly, is associated with a reduced risk of cancer and protecting the skin from harmful UV radiation. In addition to containing plenty of dietary fiber, broccoli has lots of vitamins C and E, provitamin A, potassium, calcium and iron. Due to its high content of coenzyme Q10, broccoli is also said to have a rejuvenating and anti-ageing effect.

Fresh broccoli is dark to blue-green, compact and firm. Since it withers quickly and loses its valuable nutrients, it should be prepared and eaten soon after harvesting – preferably within three days.

Important: The shorter the cooking time, the more nutrients are kept! Even consider trying broccoli raw in a salad or in a slaw!

1 serving of cottage cheese
Cayenne pepper and nutmeg 

Preparation:
Clean the broccoli and cut into small florets. Bring the vegetable stock to the boil and cook the florets in it for about 5 minutes until soft. Take out a few broccoli florets and set aside. Add half of the cottage cheese to the broth and and then place everything in a blender and puree until smooth. Season with cayenne pepper and nutmeg. Pour the soup into a bowl, add the remaining cottage cheese and garnish with the reserved broccoli florets. Enjoy!

This roast beef and broccoli dish, pan fried with apple is tasty and wonderfully easy to prepare. 

Ingredients:
1 serving of roast beef
1 serving of broccoli
1 portion wholemeal rye bread
1 apple
salt, pepper

Clean, wash and cut the broccoli into florets. Bring about 2 cups of salted water to the boil in a saucepan. Add the florets and simmer covered until cooked al dente (about 5-8 mins). Drain in a sieve.

Remove the seeds from the apple, cut into eighths and finely chop. Cut the roast beef into 1 cm (1/2″) wide strips and add to the pan, together with the broccoli and apple. Season with salt and pepper and fry for two minutes.

Arrange everything together on the bread and enjoy.

One of our rules is “eat an apple a day”. It is not necessary to just eat the apple by itself or as a dessert. It also adds flavor in savory dishes. For example, try it in this delicious roast beef broccoli pan.

You need:
1 serving roast beef
1 serving broccoli
1 serving wholemeal rye bread
1 apple
salt & pepper

Clean and wash broccoli and divide into florets. Bring to the boil in a saucepan about 2 cups of salted water. Add the florets and cook covered for about eight minutes. Drain in a sieve.
Remove the seeds from the apple, cut into eighths and chop finely. Cut the roast beef into wide strips of 1 cm (1/2″) and add to the pan, with the broccoli and apple. Season with salt and pepper and fry for two minutes.
Arrange everything on the bread and enjoy!
