Bell Pepper and Mango Bean Dip

This creamy bean dip with mango and bell peppers is perfect to serve with bread or crackers.

Ingredients:
1 serving of white beans
1 serving of bell peppers
1 serving of mango
1 serving of whole rye bread 
Vinegar
Vegetable broth
Mixed herbs (ex: smoked paprika, chili, garlic powder etc.)
Salt and pepper

Preparation:
Soak the beans overnight, cook in water for about 40 minutes. Drain the water and leave the beans to cool. Add salt and pepper to the beans and puree with a splash of vinegar and broth. Wash and clean the peppers, cut into small cubes and add to the beans along with the mango and herbs of your choice and puree until smooth. If the mixture is too firm, stir in a little water, season to taste. Enjoy the dip with bread or crackers!

Vegetarian Sandwich Spread

This vegetarian sandwich spread is easy to make but packed full of flavor!

Ingredients:
1 serving of seeds (pumpkin and sunflower seeds)
1 tbsp pumpkin seed oil
1 tablespoon of balsamic vinegar
Vegetable broth
1⁄4 teaspoon dried oregano and thyme
Chives or cress
2 slices of rye bread

Preparation:
Roast the seeds in a dry pan and allow to cool. Add the seeds along with the other ingredients to blender and puree until smooth. If the mixture is too dry, add some water. Spread the mixture on bread and garnish with cress or chives. Enjoy!

Tip: This spread also tastes great as a dip with fresh vegetables such as tomato, cucumber, radishes, peppers and kohlrabi. For more variety you can also experiment by adding different spices!

Nutty Vegetable Dip

This dip is great for dipping vegetable sticks and is a great quick meal.

Ingredients:
1 serving of spread made from pumpkin/sunflower seeds
2 Tbps. of fresh chopped herbs (rosemary, oregano, basil, etc.)
50 g cucumber
100 mL (~1/2 cup) olive oil
2 cloves of garlic
Fresh chili pepper
Salt and pepper

Preparation:
Roast the seeds in a dry pan and then set aside to cool down. Peel the garlic cloves, wash chili pepper and cucumber and cut everything into small pieces. Place all ingredients in food processor or blender and puree until smooth. Season with salt and pepper. Pour into a glass and pour a bit of the remaining oil over top. Serve with vegetables sticks and enjoy!
