Leek Salad with Soybean Sprouts

This leek salad combines sweet and savory for a delicious light and refreshing salad.

Ingredients:

1 serving of soybean sprouts
1 serving of leeks
1 serving of fruit (mango or apple would work great!)
Curry powder
Balsamic vinegar
Salt and pepper

Preparation:
Cut your fruit of choice into pieces. Wash soybean sprouts and set a small portion aside. Wash the leeks, peel them and cut them into thin rings. Heat a pan with a little water and cook the soybean sprouts and leeks in it briefly. Season with curry powder, salt, pepper and vinegar. Allow to cool, add fruit and serve.

Leeks

You might be surprised to know that leeks are actually a member of the lily family! Leeks are a typical winter vegetable that have a light green color and are a milder and sweeter version of an onion. They contain vitamins B1 and C, and are abundant in iron, magnesium, calcium and phosphorus. Leeks are good for digestion, help stimulate the liver and gall bladder, and have been shown to lower blood sugar. Along with being very healthy, leeks are also an extremely versatile ingredient that can be used in many different dishes. You can slice it thinly and eat it raw or cook it and use it in a frittata, creamy soup, or pasta dish.

Wild Garlic Soup

This delicious wild garlic soup is a perfect dish to help boost your immunity!

Ingredients: 
1 serving of leeks
1 cup (250 ml) vegetable broth
25g wild garlic 
1 serving of cream cheese or feta
Ghee
Salt, pepper
Lemon juice or apple vinegar

Preparation:
Cut the leeks lengthwise and wash well. Then slice finely and cook in the ghee over medium heat until the leeks start to gain some color. Deglaze the pan with the broth, cover, and simmer. Wash the wild garlic and cut into fine strips. Put a small handful of the cheese aside and the rest along with the wild garlic to the broth. Add everything into a blender and puree until smooth. Season with salt, pepper, and vinegar or lemon juice to taste. Serve immediately with the remaining cheese and toasted rye bread for a delicious lunch or light dinner.
