This light and refreshing salad is a perfect lunch for summer day and is packed full of protein and nutrients.
Ingredients:
-120 g (4 oz.) skinless chicken breast
– 1-2 cups of mixed greens or arugula
-2 small Persian cucumbers, diced
-1/4 red onion, sliced
-1 tbsp. fresh parsley, basil, chopped
-1 small handful of blackberries
-1 tsp of olive oil
-1 tsp of dijon mustard
-1 tsp of apple cider vinegar or lemon juice
-Salt and pepper
Preparation:
Grill or poach the chicken until fully cooked through. Then to prepare the salad add all of the vegetables and blackberries into a bowl. In a separate bowl, mix the olive oil, apple cider vinegar, and salt and pepper together. Then mix the salad and dressing together. Top the salad with your sliced chicken and enjoy!
