Bell Peppers

Bell peppers are part of the nightshade family and a commonly used fruit! They can be found in many different varieties and colors including green, yellow, orange, and red. Although bell peppers are over 90% water they do have some great nutritional benefits. They are rich in Vitamin C, Vitamin A, and Vitamin B6. In the kitchen, bell peppers are extremely versatile and great both raw or cooked. You can eat them with hummus, in a salad, use them in gazpacho, or even make stuffed bell peppers.
