This delicious salad is packed full of healthy nutrients and delicious ingredients including pears!
Ingredients
- ~150 g (5-6 oz) cooked chicken breast
- ~2-3 cups fresh spinach
- 1 medium pear thinly sliced
- 2-3 tbsp walnuts
- 1-2 tbsp blue cheese crumbles
- 1 tbsp extra-virgin olive oil
- 1 tbsp lemon juice
- 1 tbsp fresh herbs chopped (parsley, rosemary, etc.)
- Salt and pepper to taste
Preparation:
Prepare the greens & vegetables by washing and drying the spinach and slicing the pear. Make the dressing by whisking together the olive oil, lemon juice, fresh herbs, a pinch of salt & pepper. Then assemble the salad by combining the spinach, pear, nuts, blue cheese, and chicken. Drizzle the dressing over everything and toss gently to combine.
